Creamy Lemonade Pie


In a previous post, I explained to you how our Saturdays are all about finding great recipes and cooking together.  This past Saturday was no different, well a little different.  This past Saturday I took Little Man to a birthday party that lasted a lot longer than I had anticipated.  Needless to say, I was left out of the menu planning.  Hubby and Sweet Girl came up with their own plan and no one was disappointed.  Part of their plan was this dessert - the best part of the plan - Sweet Girl wanted to make it herself.  Can I just say  I am one proud momma!  Sweet Girl rocked this no bake pie and had a blast making it.  She served a piece to her buddy next door who tasted it and said, "Wow - this is the only pie I have ever liked!"  Enjoy!!!


Recipe from Southern Living
What you need:
2 (5-oz.) cans evaporated milk
2 (3.4-oz.) packages lemon instant pudding mix
2 (8-oz.) packages cream cheese, softened
2 (3-oz.) packages cream cheese, softened
1 (12-oz.) can frozen lemonade concentrate, thawed a little bit
prepared graham cracker crust
   whipped cream

What you do:
Whisk together evaporated milk and pudding mix in a bowl for 2 minutes or until thickened.
 Beat cream cheeses at medium speed with an electric mixer, using whisk attachment, until fluffy.


 Add lemonade concentrate and beat until blended; add the pudding mixture, and beat until blended.
 Pour into crust.


Smooth out the filling.


Don't forget to lick the spoon!



Freeze for 4 hours or until firm. Top with whipped cream.
