I participated in the Crazy Cooking Challenge this month. I couldn't resist after all the theme was Macaroni & Cheese. Our challenge was to find a Macaroni & Cheese recipe from somewhere in blogland, make it and blog about it. Count me in - I love Macaroni & Cheese - the whole family does! I found a lot of great recipes but I let my kids choose the one we would ulltimately make. They couldn't wait to try these Macaroni & Cheese Muffins from What's For Lunch at Our House. They helped make them too! Enjoy!

For Lunch at Our House
What you need:
Round butter-flavored crackers
1 (8-ounce) package elbow macaroni
1 can cheddar cheese soup
1/2 cup cooking creme or milk (I used milk)
3 cups shredded sharp Cheddar cheese - I actually only had 2 cups and the results were great so I would say use anywhere from 2-3 cups. (keep 1/4 cup out to sprinkle on top)
1 egg, lightly beaten
1 tablespoon butter
1/2 teaspoon salt
1/4 teaspoon black pepper
What you do:
Preheat oven to 375 degrees F. Coat a 12-cup muffin tin with cooking spray or use muffin wrappers, I only had two left but I used them and of course the cleanup in those areas were much easier than the rest of the muffin tin.
Place a cracker in the bottom of each muffin cup and set aside.
Cook macaroni according to package directions; drain and return to pot.
Stir in remaining ingredients until well-blended.
Spoon mixture into muffin cups and sprinkle with extra cheese.
Bake 15 to 18 minutes, or until heated through. Let stand for 5 minutes, remove from tin with knife if you didn't use the muffin papers.
Sweet Girl loved these!
But for the real test - Little Man aka Mac 'n Cheese boy...
Yes! Two Thumbs Up!! I'm hoping to put some in their lunchboxes for tomorrow at school. I think they would love it.

ReplyDeleteLove seeing these! :) Were they so much better with the muffin papers? I need to make them again and try it, the mess was something else from the first batch (though I think the cheap bake spray has a lot to do with it too!).

These are so cute! I would love to know how they did in your kids' lunches the next day. I'm always looking for new lunchbox ideas. I will keep these in mind when we do our mini-meal themed dinner that I'm planning. Yum!
