Mango Guacamole and Michelada


I have been perusing the cookbook section at the library a lot lately.  This last time I checked out Fiesta at Ricks a Rick Bayless cookbook.

The book was full of great recipes.  I think I have mentioned that Hubby enjoys cooking as much as I do.  Our Saturday morning ritual is all about pancakes.  Then we normally skip lunch and have a few snacks and then a great dinner.  We plan the snacks and dinner pretty much from the moment we wake up.  This past Saturday we went right to this cookbook, we chose to make Mango Guacamole and enjoy it with  some Micheladas (Limey and Spicy Beer.)  We continued the fiesta theme by making Pork Carnitas for dinner we were going to make the ones from the book but we had trouble finding a lot of the ingredients so we blended a few recipes and created our own.  I will post that later because these amazing apps deserve their own post. Enjoy!!

Lets start with the Michelada


Recipe from Fiesta at Ricks
What you need:
 lime for moistening the rim of the glass
coarse salt
ice cubes
1/4 cup fresh lime juice
1 12 ounce beer
1/2 teaspoon hot sauce (Tabasco works well)
1/2 half teaspoon Worcestershire

What you do:
Moisten the rim of the glass and dip it in salt.  Fill the glass halfway with ice and then add the lime juice, followed by the beer.  Add the Worcestershire and hot sauce and stir to combine.

And now for the Mango Guacamole

What you need:
3 medium ripe avocados
1/2 small red onion, chopped
1/2 to 1 whole serrano chile, stemmed, seeded and finely chopped
2 tablespoons loosely packed cilantro, plus some for garnish
1 tablespoon fresh lime juice
1 large ripe mango, peeled and diced

What you do:
Scoop the avocado flesh into a bowl and coarsely mash.  Scoop the onion into a strainer and rinse under cold water. Shake off the excess water and add the onion to the avocado along with serrano, cilantro, lime juice and 2/3 of the mango.  Combine.  Taste and season with salt (about 3/4 teaspoon.) 
Scoop into a serving bowl and top with remaining mango and cilantro.

  4. ooh, this reminds me that i won a ricky bayless cookbook + have yet to make anything from it. so many cookbooks, so little time! both recipes look awesome, though, so i'm going to bring it out of the bookshelf + make something out of it! =)

  5. I love checking out the library for cookbooks. Especially for more "specialty foods" where you're not sure if you'd want to buy it. I love every kind of guac! Yummy!
