Cookies n' Cream Brownies



I am one of those people who does not like to show up empty handed when I am invited to someones house. I bet you know what I'm talking about because your the same way right? But what about those last minute invites when you have an empty fridge because you are getting ready to go on vacation very soon. I ALWAYS have a box of brownie mix in my pantry (usually 2 or more because I wait for them to go on BOGO at Publix at then stock up.) Anyway- so I have a box of chocolate brownie mix but I want to fancy it up a bit so I look for some ideas on line and then let the family help - the kids wanted s'more brownies the hubby cookies 'n cream. I don't know what happened but somehow after a long few minutes everyone agreed on cookies 'n cream. The get together we were going to was kind of big so I made the brownies thinner so we would have more. Everyone loved these and it was the only completely empty tray by the end of the night woo hoo not that I wouldn't have complained about having some leftovers. Enjoy!!
What you need:
1 box of brownie mix
1/4 cup of water
2/3 cup of vegetable oil
2 eggs
10 crushed Oreos
1/2 container of creamy vanilla frosting
5 Oreos, coarsely chopped

What you do:
Heat oven to 350ºF. Grease or spray the bottom of a rectangular pan, 13x9 pan.  Stir brownie mix, water, oil and eggs in medium bowl until well blended. Add in 1 cup crushed cookies and spread mixture into greased pan.
 Bake 24 to 26 minutes or until toothpick inserted comes out clean or almost clean. Cool completely, about 1 hour. Frost with frosting. Sprinkle with 2/3 cup chopped cookies. For 20 brownies, cut into 5 rows by 4 rows.
