I found this recipe for Zucchini Chips on MyRecipes.com when I was looking for dinner ideas. This immediately caught my eye and I thought this might be fun for the kids and maybe my Little Man will eat a vegetable that is not a tomato or cucumber -but it does resemble a cucumber so I thought that would help. These were really good but I must admit, once I started breading them I did begin to think "what have I gotten myself into?" it was tedious, dipping and breading two zucchinis worth of chips. But I was happy with the end result, Hubby thought they were good too, Sweet Girl loved them and Little Man well - he wasn't fooled by the cucumber look a like. He was at first and he ate one before it was breaded and cooked, he didn't like it so once they were done he wouldn't give it another try. I tried to offer him a variety of dips and dressings to get him to eat it but he wouldn't. Oh well - the rest of us liked it. Enjoy!!
What you need:
1/4 cup dry breadcrumbs
1/4 cup grated fresh Parmesan cheese
1/4 teaspoon seasoned salt
1/4 teaspoon garlic powder
1/8 teaspoon freshly ground black pepper
2 tablespoons milk
2 1/2 cups (1/4-inch-thick) slices zucchini (about 2 small)
Cooking spray
What you do:
Preheat oven to 425°.
Combine first 5 ingredients in a medium bowl, stirring with a whisk. Place milk in a shallow bowl. Dip zucchini slices in milk, and dredge in breadcrumb mixture. Place coated slices on an ovenproof wire rack coated with cooking spray; place rack on a baking sheet. Bake at 425° for 30 minutes or until browned and crisp. Serve immediately.
