While browsing through Pinterest, I found a picture of some great looking Jello Shots. I clicked on the link and found myself scrolling through a bunch of fun recipes for all kinds of Jello Shots (and I must add - they were all beautiful.) The Name of the blog is Jelly Shot Test Kitchen and the shot I chose to make for an outdoor summer party yesterday was actually called Santa's Hat Jelly Shot. I chose this one mainly because I had most of the ingredients in my house already and it sounded pretty good. If you click on the link you will see why they were named Santa's Hat, they were made in a pyramid shaped mold and dipped in coconut flakes to resemble - well you get it - Santa's hat. I chose to use mini cupcake wrappers for mine (I don't recommend that they stuck to the wrappers) I also made a few in an ice cube tray (those are the oval shaped ones and that worked out fine.) I also made (not shown) one small baking pan full and when they were cooled I just cut them into squares (this worked the best.) Oh - I almost forgot to mention - these were great! Much better than normal vodka and jello shots. Everyone loved them at the party - Enjoy!!
What you need:
1 1/4 cup cranberry juice cocktail
2 1/2 envelopes Knox gelatin (1/2 envelope equals about a teaspoon of gelatin powder)
3/4 cup Malibu coconut flavored rum
2 tbsp grenadine syrup
What you do:
Pour cranberry juice into a small saucepan. Sprinkle with the gelatin and allow to soak for a minute or two. Heat over very low heat, stirring constantly, until gelatin is fully dissolved (approximately 5 minutes). Stir in the Malibu rum. Add the grenadine. Pour into molds and chill until fully set, several hours or overnight.
