This is a quick but amazing side dish. We love asparagus in this house especially when its cooked this way, yes I said we, my kids love this too! Its super simple we make your basic roasted asparagus and then add a little something extra Enjoy!
What you need:
1 bunch of asparagus, trimmed
Fresh Ground Pepper
roasted sunflower seeds
What you do:
Preheat your oven to 400 degrees.
Place asparagus on a baking sheet and drizzle with olive oil and then sprinkle with the salt and pepper.
Toss to make sure its completely coated.
Spread the asparagus out in one layer and roast for about 25 minutes, shaking the pan every once in a while.
When its done turn off the oven. Crumble the goat cheese over the asparagus and sprinkle with the sunflower seeds, place the sheet back in the warm oven for a few minutes to soften.
I've done this with parmigiana and pine nuts too.
