Curried Chickpeas Over Quinoa

Sweet Girl had her dance pictures at 7:15 the other night - they took forever!!  By the time we got out it was so late I was hoping Hubby was home getting dinner together so I didn't have to think about it.  No such luck - he decided to work (very) late that night.  So I had to throw together dinner and I had no plan, not to mention it was late so I didn't want anything heavy.  I started emptying the fridge and cooking everything that needed to go not thinking about paying attention to the recipe because this was not going to be special at all.  Well, turns out it was very special!  I am going to attempt to recreate this recipe for you because I thought it was great.  Sweet Girl actually told me it was the best meal we had all week (that's not saying much, it was a week of leftovers - but still.)  Enjoy!!

I apologize for my measurements

What you need (approximately)
1 onion, chopped
3 carrots, chopped
1/2 zucchini (that's what I had in the fridge -use more if you like) chopped
3 garlic cloves, minced
a few handfuls of spinach
1 can of chickpeas, drained
1 tablespoon tahini (I think - I just poured some in - you can omit this if you want)
a bunch (sorry- I literally threw it together fast) of Cumin, Curry Powder, Salt and Pepper

What you do:
Saute veges until soft
Add chick peas and saute for a few minutes
add spices and cook for a minute or two
 Add tahini (if using)
If it seems really dry add a splash of chicken broth
Add spinach and cook until wilted.
Serve over

  1. Funny, I just fixed Quinoa Saturday. I usually just mix canned vegetables with a pot of Quinoa cooked in chicken broth. I added artichoke hearts, roasted red pepper, chick peas or black beans, Rotelle or diced tomatoes. All one can/or jar each. Then I add dressing: olive or sesame oil, vinegar, mustard, salt, pepper, italian seasoning, and minced garlic. We serve it as a cold salad. Your recipe looks great too!

  2. I LOVE chickpeas! What a great recipe - I'd love to try it as soon as I got back from school. I've never tried to make something like this so it'd be a challenge - but I just bookmarked it so I can try in a few weeks! :D

  3. Toooootally trying this after the Farmer's Market this Saturday! I've had chickpeas and tahini sitting in my cupboard for ages, and I really didn't want to make hummus yet again, haha. Thank you for this!

Found ya via Tasty Tuesday over at FTLOB, by the way! :)

  5. Hi! This is my first visit to your blog (I think). I found you through Tasty Tuesdays. I love this combination. It's basically half my favorite foods in one meal. :) So, I'm definitely making this, and I think I'll do it tomorrow. Thank you so much for the inspiration ... and I think your measurements are perfect. :)

  7. I love it when just throwing random things into a pan out of necessity comes together into something delicious! Judging by the ingredients in this dish, I know it would be a HUGE favorite over here!

  9. You cook the way I cook! Many times I find the best meals come together just by seeing what's in the fridge and pantry! I've been a vegetarian for 20 years and unbelievably I've only had quinoa twice! The first time was not good, but then about a month ago I had quinoa stuffed peppers with aoli and they were so good. Anyway, I bought more and now you've given me an idea of how to use it. Thanks! Visiting from HoH ~ Yvonne
