Peanut Sesame Noodles



Today I am sharing one of  Little Mans favorite dishes.  My Little Man is an absolute peanut butter lover and like most kids he enjoys pasta too.  Why not put them together?  I have made several versions of this dish but this recipe from my Gourmet cookbook is my favorite.  This cookbook is my absolute favorite too.  I was very upset when Gourmet magazine stopped printing, I loved their articles and recipes and I was a huge fan of Ruth Reichl  (their I go off topic again.)

OK back to Peanut Sesame Noodles, this is a great dish and easy to make.  While your pasta is cooking, you simply throw the rest of the ingredients into a blender and blend away.  Mix it all together and Enjoy!

What you need:

For Dressing
1/2 cup smooth peanut butter
1/4 cup soy sauce
                              1/3 cup warm water
                                        2 tablespoons of chopped fresh ginger
                                1 garlic clove chopped
                               2 tablespoons red wine vinegar
                            1 1/2 tablespoons of sesame oil
                        2 teaspoons honey
                                1 teaspoon red pepper flakes


For Noodles
3/4 pound of thin pasta (thin linguini or spaghetti)
4 scallions, thinly sliced
1 each red pepper, yellow pepper thinly sliced
3 tablespoons of toasted sesame seeds

Modifications:  When I made this recipe this time I didn't have some of these ingredients on hand so instead of adding the peppers I added a shredded carrot for some sweetness.  Also,  I didn't have sesame seeds on hand so I used roasted chopped peanuts.


What you do:
Make the dressing by combining all ingredients in a blender and blending until smooth. 
 Transfer to a bowl.
Meanwhile,  cook pasta according to package directions. 
 Drain when done and rinse with cold water. 
Add pasta, scallions, bell peppers and sesame seeds to dressing and toss to combine.
