Every Saturday morning the kids come bouncing into our room, they really do, they jump and land right on hubby and ask "what's for breakfast?" You see in this house we have a Saturday morning tradition, the kids and hubby always make breakfast together - what do I do you ask - I enjoy my many cups of coffee and catch up on some magazine reading. Although this morning I couldn't help but put down those magazines and grab the camera. Hubby and the kids went through our
Mom and Me Cookbook
and decided to make crepes. They came out so good and the two little chefs had so much fun helping with this one -we have a lot of fun cooking with the kids. Enjoy!!
What you need:
1 cup flour
2 eggs
1 cup milk
1/4 cup water
pinch of salt
4 tbsp butter
fillings we used
strawberries
bananas
Nutella
peanut butter
chocolate syrup
What you do:
Sift the flour and salt. Make a well in the center and break the eggs into the well. Whisk the eggs and flour together. Next, mix the milk and water in a separate bowl. Add the liquid to the flout a little at time whisking as you go to make a smooth batter. Melt 2 tbsp of butter and stir into the batter.
Melt the remaining butter ina pan, get it really hot and then turn down the heat to medium. Add the batter to the pan, you will need about 2 tbsp for each crepe. Tilt the pan to spread the batter. Cook the crepe for about one minute. Use a spatula to loosen and then flip it over and cook for about 30 seconds more.
Meanwhile have your little helpers prepare the filling.
Fill the crepes and serve
We used different combinations of the above fillings, this one has strawberries, bananas and Nutella in it, others were banana and peanut butter. We drizzled chocolate syrup over the top of them but you could use maple syrup. This breakfast was a lot of fun!
