Inspired by Cat Cora

I wasn't sure what I was making for dinner last night but I knew it I had some chicken defrosted.  I was leafing through my Bon Apetit and found a McCormick ad with a Cat Cora recipe.  I looked at it and thought wow looks good.  Read it and thought  wow sounds great and I have all those ingredients.  I was so wrong - normally I pull ingredients out before I begin but I was confident I had everything so I started heating the saute pan and from the get go I realized I had nothing in this chicken recipe. But I still wanted it so here is my variation on this tasty dish.  It was great and going into the recipe box with a kids like smiley face on it (that's how I mark the dishes the kids really like.)  Little Man cleaned his plate - this doesn't happen too often.  Enjoy!

Cinnamon Stewed Chicken
2 tsp cinnamon
1/2 teaspoon kosher salt
a few grinds of  black pepper
1.5 - 2 pounds chicken thighs (I used boneless and skinless)
1 tablespoon olive oil
1 med onion, chopped
2 tablespoons garlic, minced
1/2 cup chicken stock
1 cup water
1 can diced tomatoes (I used fire roasted)
2 teaspoons oregano

Ina Ziploc add your spices and chicken and shake to coat.
Heat oil in a skillet and brown chicken about 4 minutes per side, remove to a plate.
Add onions and garlic and saute for about 4 minutes or until golden.  Add chicken stock and bring to a boil on high heat.  Let cook for abut 2 minuted or until reduced.  Stir often to loosen brown bits in pan.
Stir in water, tomatoes and oregano, bring back to boil.  Add chicken back to pan and reduce heat to a simmer.  Let simmer 30-45 minutes or until chicken is cooked through.

Spicy Coriander Rice
1 tablespoon olive oil
1 small onion, chopped
1 teaspoon coriander
1/2 teaspoon ground ginger
1/4 teaspoon crushed red pepper
2 cups water
1/2 cup frozen peas
1 cup basmati rice
1/2 teaspoon kosher salt

Heat oil in a medium saucepan and saute onions until golden.  Add spices and cook for about 30 seconds.  Add water and peas and bring to a boil.
Stir in rice and salt, reduce to low and cover.  Simmer for 20 minutes.

Serve chicken and sauce over rice.
