I desperately needed a healthy lunch after the past few weeks. Our company started at Thanksgiving and just kept coming. There was Little Mans birthday - of course there are the school parties, the friend parties and I still need to begin my baking (I'm a bit behind this year.) Yesterday I felt like I needed to eat something good for me. Here's what I came up with it has cannelini beans and tuna in it and whatever I could find in the produce drawer. Some arugula (love arugula) a few grape tomatoes and some red onion. I topped it off with a little salt and pepper a drizzle of olive oil and some red wine vinegar (I would have preferred lemon but I couldn't find one.) This was a great lunch I shared it with Sweet Girl and we decided we needed to make it again and again. Enjoy!
