Finding Joy in My Kitchen is doing a great countdown to 2011 on her blog. The other day she did a soup countdown and had a recipe for Crockpot Chicken Spinach Soup in it. It caught my eye and I knew we had to have it for dinner. I tweaked it just a bit based on ingredients I had on hand and it was delicious. My favorite little tip in this recipe was that you can put frozen chicken into the crockpot really? I had no idea. It worked out great. Here's my recipe for this great soup - I almost titled it "I got my Kids to Eat Spinach - Again" because I did! They cleaned their bowls and had seconds too. Enjoy!
Crockpot Chicken Spinach Soup
1/2 onion, diced
3 garlic cloves, minced (we love garlic)
2 cups chicken broth
1 1/2 cups water
1 (14 ounce) can diced tomatoes - I used fire roasted
1 can Great Northern White Beans, Drained
4 chicken thighs
1 box of frozen spinach
1 tsp basil
salt and pepper to taste
Place all ingredients in crockpot and let cook on low for about 8 hours. Before serving I shred the chicken and remove any bones or skin and place it back into the pot. I served this topped with freshly grated Asiago cheese and some crushed red pepper (I need my spice) along with a big hunk of roasted garlic bread for dipping.
