A very white plate

Tonights dinner ended up being very white.  White food, white plate but really delish! We had a very simple tilapia, I served it over cous-cous made with spinach, tomatoes and mozzarella and then I also roasted some cauliflower to go with it.  Sweet Girl had seconds of the cous-cous and the tilapia.  Little Man shocked us all by finishing his meal first - no really!  This is huge, normally everyone else finishes (usually with seconds) and Little Man is sitting at the table and we are begging him to eat.  Eventually, I get up and begin to clear some dishes ..and Little Man is laughing at some joke he just told himself.  Then everyone leaves the table and dishes are being done and food packed away ...and Little Man is still sitting at the table....and we are begging him to eat or just let us take his plate.  But not tonight, tonight I got up to get something and he came by with his plate and said (the usual after dinner question) "Now do I get dessert?" I turned around about to tell him to sit down when I looked down at his plate and simply said, "uh, yeah absolutely!"  Another dinner adventure.  Enjoy the Tilapia!

Super Easy Tilapia
1 lb Tilapia
3 Tablespoons butter, melted
1/2 lemon
1-2 garlic cloves, minced (depending on preference we like 2)
salt and pepper

Preheat oven to 400 degrees.  Melt butter in microwave and stir in the minced garlic.
Clean and pat dry the tilapia.  Place on baking sheet.  Squeeze lemon juice over both sides of fish. Sprinkle with salt and pepper and then pour or brush the butter over the tilapia.
Bake for 12 minutes or until tilapia has a flaky texture.
