Flapjack Flapper's Flapjacks

Flapjack Flapper's Flapjacks, kind of sounds like something out of a Dr. Seuss book, right?  Actually, it is- these flapjacks are mentioned in Dr. Seuss's Oh Say Can You Say?  We took the kids to the library this weekend and Sweet Girl picked out two Amelia Bedelia books and then right before she left she grabbed one more book.. She is so my child - she grabbed the Green Eggs and Ham Cookbook.  It is a cookbook full of recipes inspired by Dr. Seuss.  Her daddy, feeling guilty for being out of town so much, told her to pick out a recipe and they would make it for breakfast.  Consensus in this peanut butter loving family was to make these delicious pancakes. Well , everyone but me that it - I prefer the savories and was hoping for some green eggs and ham.  The eggs are green because they are topped with an avocado mash.  But, back to Flapjack Flapper's Flapjacks - pancakes made with peanut butter and bananas - delicious!

1 cup flour
2 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons sugar
1 egg
2 1/2 tablespoons peanut butter (creamy or chunky)
1 cup milk
3 tablespoons melted butter
2 bananas, sliced 1/4 inch thick
1/3 cup shelled peanuts

In a bowl combine the flour, baking powder, salt and sugar
In a large bowl, combine the egg, peanut butter, and milk and beat with an electric mixer
Add the butter, then add the flour mixture all at once and beat until smooth (2-3 minutes.)  Stir in 1/4 banana slices
Butter the griddle or frying pan and heat
Ladle about 1/4 cup batter for each flapjack, leaving space in between them.  When the tops begin to bubble and the sides are golden brown, flip them over (after about 1 1/2 minutes.)  Cook on other side until golden brown (about 1 minute more.)  Repeat with the rest of the batter. 
Serve the flapjacks topped with bananas, peanuts and syrup.

    Ohhh...I love pancakes and I love peanut butter! In fact, I put PB on my pancakes along with maple syrup! But this is the first time that I have seen a recipe with the PB in the actual pancake mix...sounds sooo yummy! I'll have to give your recipe a try...thanks for sharing it with the Sunday Favorites party today!

  3. I have to make this for me fiance. He loves slathering the PB on his pancakes (sorry, I'm a syrup only kind of but I do love the idea of the bananas.
