I love chicken pot pie. Ok, maybe I am just a comfort food junkie (I am.) I also love a one pot meal. This one came out pretty too! So for today my picture is of my Chicken Pot Pie. I measure the success of my meals by how much my 4 year old will eat. I have a daughter who is 7 who drools over brussel sprouts in the grocery store so she's pretty easy. But not my son - he needs to be won over. I think when I told him we were having pie for dinner he just got excited. He did, however have seconds. Success!!
Chicken Pot Pie (easy recipe)
1 package of refrigerated pie crust (2 crusts)
1 can of chicken, chopped or shredded
1 can of mixed vegetables, drained
1 can of cream of chicken soup
1/4 teaspoon of poultry seasoning
1. Preheat oven to 400
2. Lay one pie crust over a 9 inch pie plate
3. Mix the rest of the ingredients and pour into pie crust
4. Wet edge of crust with water and lay the other crust over. Fold and crimp edges. pierce the crust with a knife.
5. Bake for 40-50 minutes or until golden.
